Last season's best low-major opponent was KenPom #211 Idaho State.

Instead, if I was making the schedule, I would consider something like the following:

Mountain West Conference #169 San Jose State and #185 Wyoming
West Coast Conference #155 LMU and maybe even #120 Wazzu or #80 Oregon State
Big West Conference #148 UCSB and #182 Cal Poly SLO
Western Athletic Conference #145 Seattle and #172 Cal Baptist

I'd also consider #134 New Mexico State, #162 UTEP and #175 Sam Houston State from Conference USA.

North Carolina had the highest ranked NCSOS of any Power-5 team last season and they played five teams ranked in the 200s, so my proposed schedule would very likely give UCLA the best NCSOS among high-major schools, which would help their tournament seeding immensely -- as long as they win.
